It’s summer and that means fresh fruit and vegetables galore. Open-air markets are everywhere and farmers have a cornucopia of produce. There’s no better time to make one of my favorite summertime salads. Not only is it pretty and tasty but it’s chock-full of ingredients that are high in antioxidants - substances that fight free-radical damage and keep us youthful and energized. Enjoy!
